Salmon Burrito Recipe

 

Smoked Salmon Burritos

Smoked salmon burritos are a great light dish in the summer. Perfect for those hot nights when you want something fast and easy. Even the kids will enjoy salmon burritos. After all, eating dinner with your hands is always fun! With all the benefits of salmon you can't go wrong with this quick and easy recipe.

Ingredients:

  • 8 oz. of  Smoked Salmon
  • 4-6 Flour tortillas
  • 1 cup Monterey Jack or Havarti cheese.
  • 1 cup chopped or shredded Lettuce
  • 4 Roma tomatoes chopped or sliced
  • 2 onions, chopped
  • 2 ripe avocados, chopped

    Optional - 1 cup cooked white rice, 1 cup cooked drained black beans

Instructions:

1. Chop the avocados, onions, and lettuce
2. Slice or chop the tomatoes
3. Heat a flour tortilla on the a griddle or the rack in the stove oven.
4. Once the tortillas are heated sprinkle lightly with Shredded Monterey Jack or Havarti cheese.
5. Once cheese is slightly melted, place on plate and top with crumbled
    Smoked Salmon, chopped lettuce, tomato, onion and avocado. (Add optional ingredients)
6. Fold in the bottom, sides and top of the tortilla to enclose the filling and serve.

You can heat the Smoked Salmon but it is not necessary.
